Roasted Sweet Potatoes – A Beautiful Mess


Roasted sweet potatoes are a flavorful and healthy side dish that you can easily make in about 30 minutes.

I love this alongside steak or chicken tenders, but you can also top these roasted sweet potatoes with a fried egg or a breakfast or vegetarian-friendly meal.

Sweet potatoes are just amazing. They are a great source of vitamins A and C as well as fiber. Plus, they are naturally sweet—so even my toddler son likes them.

Ingredients:

  • Sweet potatoes
  • Olive oil
  • Garlic powder
  • Paprika
  • Brown sugar
  • Salt and pepper

If you have some fresh herbs like parsley or rosemary, you can top these with a tablespoon or so but it’s not necessary (just an option).

How to Roast Sweet Potatoes:

Peel and rinse off the potatoes. Then, cut into bite-sized cubes.

Place on a baking sheet in one layer. If they don’t fit, use a second baking sheet. Drizzle the oil over the top. Sprinkle on the seasonings and sugar. Toss so everything gets well coated.

Roast at 425°F for 30 minutes. Halfway through, flip the sweet potato pieces.

  • The brown sugar helps to draw out the sweet potatoes natural sweetness, but if you are avoiding sugar altogether you can omit it and this recipe still works great.
  • You can use other baking oils like coconut oil or even butter if you prefer.
  • Herbs that go well with sweet potatoes include: rosemary, cilantro, parsley, and thyme.
  • If you want to add some heat to balance the sweetness of this recipe, try red pepper flakes or cayenne.
