Roasted Green Beans – A Beautiful Mess

This roasted green bean recipe is quick, simple, and so delicious. While you might not think to roast green beans, you should!

They kind of blister and the ends get crispy as they roast. Top them with a little flaky sea salt and a squeeze of lemon and you’ll be glad you tried them!

Green beans are so good for you! They are rich in nutrients, antioxidants, and fiber. And while I love the classic less-than-healthy green bean casserole, this roasted green bean recipe keeps them simple and delicious.

How to Roast Green Beans:

Prepare the green beans by trimming off the ends and any stems that may still be attached.

Place on a baking sheet in one layer. Drizzle in the olive oil and toss so all pieces get coated. Sprinkle the sea salt over the top.

Roast at 425°F for 15-18 minutes. Then, squeeze lemon juice over the roasted green beans just before serving.

Tips & Additions:

  • When trimming off the ends, you can snap them off by hand, but to make this work faster I will line up a bunch at once and simply cut off the ends with a sharp knife.
  • If you want add a little more flavor, you can add a tablespoon of melted butter to the oil and coat the green beans in it before roasting.
  • Sometimes I will add a couple tablespoons of finely grated parmesan just after roasting so it melts around the green beans before serving. When I do this, I usually sprinkle on a little pepper as well.
